Baked Oatmeal

  •     3 cups rolled oats
  •     4½ cups boiling water
  •     2 eggs
  •     1 cup brown sugar
  •     ½ cup milk
  •     ½ cup butter
  •     2 tsp baking powder
  •     1 tsp salt
  •     1 tsp vanilla
  •     1 tsp cinnamon
  •     Optional toppings: nuts, raisins, raw apple, or blueberries

Mix oats and water and let stand 15 minutes. Add remaining ingredients (except topping) and mix well. Pour into a 13 x 9 pan. Sprinkle with desired topping or leave plain. Bake at 350 degrees for 60 minutes. Serve warm. Milk is optional.
